I'm not a fan of usign a wildcard here.

Can you checks with something like:
    rm -rf $(TARGET_DIR)/usr/lib/python$$(PYTHON_VERSION_MAJOR)/site-packages/pygame/examples

(Yes, two '$' signs, which makes the variable expanded later, at call
time, not at parse time.)
