Found one, see ENV_FLAGS_LIST_STATIC. That even has ETHADDR_WILDCARD, so 
when enabling CONFIG_REGEX it could look like this for espressobin:

CONFIG_ENV_FLAGS_LIST_DEFAULT="eth\d*addr:mX,fdtfile:X"

where "X" is the immutable flag.
