Add:
Environment="G_MESSAGES_DEBUG=all"
To the service file. You should see the debug in systemctl:
systemctl status iio-sensor-proxy.service
Or in journalctl if there's too much data:
journalctl --reverse -u iio-sensor-proxy.service
