If these files are overwriting files owned by some other packages, then you will loose that customization when the package is upgraded by package manager (unless those files are listed in CONFFILES). This lets you inherit the class and override do_install(), calling bin_package_do_install as required. If you don't provide an alternative implementation of do_install then bin_package_do_install will be called. This inheritance isn't used very often as generally it's sufficient to just do_install_append() or _prepend().
